Cinnamon Baked Oatmeal
Ingredients:
- 1 cup vegetable oil (I use half apple sauce and half coconut oil)
- 2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 T baking powder
- 4 beaten eggs
- 1.5 tsp cinnamon
- 1.5 tsp nutmeg
- 5 1/2 cups old fashioned oats
- 2 cups milk (I use almond milk, but any milk will work)
Directions:
- Spray a 9X13 inch baking dish
- Mix everything except milk until blended
- Add milk and stir until well blended
- Pour into prepared baking dish
- Cover and refrigerate overnight
- Uncover and bake at 350 degrees for about 40 minutes, or until the edges begin to brown.
This also freezes really well. Just add a bit of milk when you re-heat it.
